Did you know lemons & peppers pull the toxins from your system? This is the perfect homey, feel-good, cuddly, soup and my favorite to make. Pro-tip, this soup pairs perfectly with your favorite fall movies!
Ingredients:
- Celery
- Onions
- Diced carrots
- Diced cauliflower
- 2 tomatoes
- 4 lemons
- 1 jalapeño pepper
- 2 cartons low-sodium chicken broth
- 3 chicken breasts, shredded
- Sea salt
- Ground pepper
- Pasta of your choice
Instructions:
- Warm the pot with virgin olive oil. Add diced carrots, celery, and onions, followed by cauliflower until softened
- Add diced tomatoes, seasoned with salt and pepper
- Squeeze one lemon into the pot
- Add shredded chicken
- Squeeze second lemon
- Add 2 cartons of chicken broth and more lemon juice (optional, use one carton + 4 cups of water + additional lemon juice)
- Bring to boil then let simmer for 15-20 minutes
- Meanwhile, cook and drain pasta
- Add pasta to bowl and soup mix on top, garnish with jalapeño slices
